Quick and Easy Summer Dinner Recipes
I don’t know what it is about summer, whether it’s the sun, the nice weather, or the fact that school is out, but it seems like the calendar fills up quicker than any other time of year. With a packed schedule, figuring out something for dinner can seem like a real burden. You can do fast food, but you don’t want that every night. When your evenings are full, and you find yourself scrambling for a quick meal to make before heading out the door, we’ve got recipes that you can make in 20 minutes or less.

Hawaiian BBQ Chicken Wraps
Prep Time: 5 mins
Cook Time: 10 mins
Total Time: 15 mins
Ingredients
1 Tbsp Olive oil
2 Boneless skinless chicken breasts, cut into bite-size pieces
Salt and pepper
½ Cup barbecue sauce
½ Cup shredded mozzarella cheese
2/3 Cup pineapple, chopped
¼ Red onion, chopped
1 Romaine heart, chopped
¼ Cup fresh chopped cilantro
4 Large flour tortillas
Instructions
- Heat oil in a large skillet over medium high heat.
- Add chicken pieces to the pan and season with salt and pepper. Cook, flipping once until chicken is cooked through and golden brown.
- Remove pan from heat. Add barbecue sauce to the pan and toss chicken to coat.
- Place tortilla on a plate and layer with a spoonful of barbecue chicken, cheese, pineapple, onion, chopped romaine, and cilantro.
- Roll and secure with a toothpick.
- Serve immediately.

Caribbean Grilled Salmon Kabobs

Ingredients
2 lbs. fresh salmon (skinned), cut into 1” cubes
2-3 cups of fresh pineapple, cut into 1” cubes
1 red onion, cut into 1” cubes
15 mini bell peppers (assorted colors)
2 Tablespoons Cajun seasoning spice
1 Teaspoon garlic powder
Instructions
- Soak wooden skewers in water for 15-30 minutes.
- Preheat grill to medium high heat or 400 degrees.
- Pat salmon dry and cut into cubes.
- In a small bowl mix Cajun seasoning spice and garlic powder, stir with a spoon.
- Season both sides of the salmon cubes with Cajun spice blend. Gently rub the seasoning in to make sure it sticks to the salmon.
- Alternate the red onion, pineapple, bell peppers, and salmon on the skewer until it is full. Repeat process.
- Spray the grill grates with PAM or rub down with olive oil.
- Place the salmon kabobs on the grill and cook for 2-3 minutes per side.
- Remove from the grill and serve.

BBQ Turkey Sloppy Joes

Ingredients
1 Tbsp. Olive oil
1 small red onion, finely chopped
1 large carrot, peeled and chopped small
1 red bell pepper, chopped small
2 cloves garlic, minced
1.25 lbs. ground turkey
1 cup tomato sauce
½ cup BBQ sauce
½ cup water
½ cup chopped fresh cilantro
Shredded Gouda cheese
Burger buns
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion, carrot, bell pepper, and cook, stirring occasionally, until vegetables soften, about 5 minutes.
- Add Garlic and cook, stirring, 30 seconds.
- Add turkey and season with salt and pepper. Cook turkey, breaking it up into pieces, until it starts to brown, about 6 minutes.
- Add tomato sauce, BBQ sauce, and water. Stir; reduce heat to a low simmer, and cook 10 minutes until sauce thickens, stirring occasionally. Remove from heat and stir in cilantro.
- Serve sloppy joes on toasted buns topped with shredded Gouda cheese.

Doritos Taco Salad

1 pound lean ground beef
1 packet (1.25 oz) taco seasoning
2 Romaine lettuce hearts, rinsed then chopped
1 cup black beans, rinsed
1 large tomato, seeded then chopped
1/2 cup shredded cheddar cheese
1 cup nacho cheese Doritos, broke into bite size pieces
1 cup Catalina dressing
Instructions
- Brown and crumble ground beef in a large skillet over medium-high heat. Drain grease. Add taco seasoning and water called for on packet. Stir until mixture comes to a boil. Reduce heat to low and simmer 10 minutes. Remove from heat and let meat cool slightly.
- In a large salad bowl add chopped lettuce, black beans, tomato and cheese. Add slightly cooled ground beef and gently toss to combine everything. Serve now, or chill in refrigerator until ready to eat.
- When ready to serve, add Doritos chips and dressing to salad. Toss to coat. Serve

Artichoke Garden Flatbread Pizza

Ingredients:
2 Flatbread
6 oz. part-skim ricotta cheese
6 oz. crumbled feta cheese
Dried oregano
7 oz. canned or marinated artichoke hearts (1/2 or so of a 14-oz can), drained well and sliced
Baby spinach, handful
1 Roma tomato, halved then sliced
1 small shallot, thinly sliced
6 pitted Kalamata olives, halved
Sun-dried tomato bits, a handful
Instructions
- Preheat the oven to 375 degrees F
- Warm flatbread on the oven rack for 1 to 2 minutes
- Remove the flatbread from the oven, then switch the oven setting to broil.
- Place both warmed flatbread on a baking sheet lined with parchment paper. Now, spread the ricotta cheese and feta cheese on each flatbread, and top with a generous sprinkle of dried oregano, then arrange the remaining ingredients on top. Sprinkle with more dried oregano.
- Place the flatbread pizzas on the top oven rack just a few inches away from the broiler element. Broil for 3 minutes or so until the cheese soften; watch carefully.
